It's just a cup of coffee - it doesn't cost the earth and hence why he should have paid. I had the exact same thing happen to me once and was really put off the guy - I wasn't even interested in him as a friend anymore after that. Particularly since the online site that we met on, he sent initial contact, which was free, but I spent the $$ to be able to email. You'd think he could have shouted me a cup of coffee at the least after that. Even when I'm with friends I hardly ever split a coffee bill - it's so small that it's petty to do. So on a coffee date, the guy should definitely pick up the bill - if only to show he has social skills and wants to make a good impression.
