Text Messaging...how does it work?

I'll admit I'm the last person who doesn't have a cell phone but I wanted to find out how text messaging works. I sent a message through the carrier website and saw the status as delivered. If the person is away from their phone do they still get the message? How do I know if they have text messaging service on their phone...does the message go through. Since I don't have a phone I entered my e-mail address....does a reply come back to my e-mail?
