I am not much a club person either. I prefer bars, but my GF likes to do a little clubbing, so we will compromise and do both. Its all about compromising. After two years of being together, he should have no problem with you going off with your friends to the club, but I also think that he should be willing to take you clubbing, since you enjoy it. If you do what he wants to do a good portion of your time, then I believe that he owes it to you to do what you want.

I think that creating fun memories together is something that keeps couples happy together. I'm not sure what is available in your area but you could try checking out art exhibits, live shows, hikes, the theater, comedy shows. That way you can enjoy more of a night life without always having to be at a club/bar. I think camping as a couple can be really fun too, it's chill and you get some one on one time without having to stay home. In the summer there are tons of outdoor festivals that are inexpensive and fun. Even if the activity turns out not to be your thing you can still enjoy the time spent and even laugh about it if you end up somewhere silly. And if you really wanna spice things up, there are many ways to do that as well ;)
