When I see a girl that I'm interested in I either get TOO EXCITED (happy, smiling, talking nonsense) or TOO SHY (avoiding eye contact, silent) and I think this turns them off because they just come to have a nice conversation and I'm already sky-high

Just talk to girls. You will get more comfortable talking to them the more you do it and will become more confident over time.

So true, I constantly pick myself worshipping them even though I know that they are normal and fallible human beings.
