Loved salmon and chicken. Not into materialistic things. Extremely frugal. Loves to read and exercise. Loves Ed Sheeran and Bruno Mars. I appreciate any ideas!

If it's a dating anniversary do not get him anything until you talk to him & discuss whether you will be mutually celebrating the dating anniversary. Most men have no idea this is a thing. If you go all out & don't tell him your plans you will be disappointed when he gets you nothing & he will feel like an ass. Also discuss budget. Paper is the traditional first anniversary so I'd get him a coffee table history book of his branch or if you have more money to spend & they are touring, tickets to Ed Sheeran or Bruno Mars.
