Do you think she is interested?

I met this girl i'm kind of interested in at my new job. We quickly became friendly, took breaks together one on one, she even said once she wish could talk to me more rather than go back to work. I ended asking for her number and texted her a few times, she would always answered within minutes asking questions to keep the conversation rolling. The other day she told me she had to quit the job because she needed to travel out of state to see her family for a month. Not sure whether she likes me as a friend or potentially more I texted her "It was fun working with you! :)". She replied "I hope to see you again :D". I said "Let's go for coffee sometime when you are back" I made a point to use the "sometime" in order to avoid sounding clingy. She answered "Yep we should!! I will keep you updated :3"

Being through text it can be a little confusing, do you think she could be interested, or does she sound like she was just being polite?

Well, since she's apparently gone visiting her family at a distance, not much can come of anything right now. Continue enjoying the interactions with other young ladies and send her a tickle in a month or two and see what comes back, presuming you feel like it. If you get a response and she's back in the local area, ask her out on a date or hangout or whatever young people do, immediately. Don't dawdle.

To you does it sound like an invite for something more or just a polite interaction?

I wouldn't even wait to keep texting her. You guys have enough of a friendship now that you can keep texting while she is gone. Some of the strongest bonds are formed when a person is in a changing period of life. She has quit her job and gone to family. A new environment and situation. Keep talking to her a little. See if it grows. No need to wait until she comes back and you can date others if you want while you see how things develop.
