One way I was considering it was to wait a few days/end of weekend and mention Friday to her again to see if she's fine with it, then mention that Saturday i'm not available as I'm going to "see a mate from college that i've not seen for a while" instead of mentioning my mates condition, etc. If it can't come up naturally during a conversation then just forget Saturday. You just have to live with that one. Her interest is already low, I assure you. That doesn't mean this can't be turned around at all. Do I think it will? No. This situation is just tough when no real rapport has been established.

It felt like rapport was being built before I asked her out and on the date. She really did seem interested, but now she acts really quiet and shy with me at work, etc. A work mate who's known her since she was young mentioned she's a very shy girl and at one point would have trouble speaking at all and that she's only had two weeks relationship experience. He also said her sister mentioned she doesn't have the confidence to show her feelings or handle when a guy likes her either, so I don't know if it has anything to do with that. Whenever I send a message, she doesn't ignore it at least.

I don't understand it.. she canceled on him and offered to re-schedule then he says he is busy even though he isn't. OP.. if you wanted a date then why didn't you just say Saturday... This. and thought women were the retarded ones when it came to dating. jeez. 99% of the last minute flakes I get don't even offer to reschedule.
