IMO, once apologized for, ignore any further rantings on the topic and refrain from that particular line of 'jokes' in the future.

 

If she starts ranting, simply state 'I apologized, won't do that again and consider the matter resolved. Let's move on.' If she persists, simply leave and/or disengage.

 

Reading the overview, the emotional instability canary started choking so I'll recommend caution here. Bend too much and one breaks. Good luck and welcome to LS
