How to take things slow, yet still keep her interested?

I met a girl. She is a mother of one, who she is the sole caregiver and she is in school for an additional 7 weeks. Her focus is strictly on finishing the schooling, passing the board exams and starting her career. I'm totally into this girl. She doesn't have any family here and she is very focused on school. She is pretty much my dream girl, if those exist. How do I maintain a slow approach, yet keep her interested? She seems really open and interested too. Any advice would be appreciated.

You're an idiot.

Some more details might help. Have you gone a date with this woman, or are you just friends (or acquaintances) and looking for more?

Yes, we have met and we have gone out...sort of. It's been an unconventional dating experience up to this moment. She does seem into me. Just yesterday she texted me asking when she was going to see me again. So tonight we are meeting for dinner before she has to pick up her daughter. I guess, I'm just being available and letting her dictate the pace. Some might see that as me being "Too" available but this girl is special and so much potential. At least I think so.
