Because that's where all the fat is. And if you're carefully trying to control your micronutrient breakdown, it can make a difference. But, they are most certainly healthy.

No, they are quite healthy, as well as being the most nutrient and vitamin-dense part of the egg.

The tastiest part too. Have just had 3 full eggs for breakfast today. Yum

Yes, but here's the thing: there are different types of cholesterol. The fat in egg yolks is primarily unsaturated, which has been shown to increase HDL cholesterol. Raising HDL can actually lower LDL (the stuff that clogs arteries). Basically, whole eggs can actually help promote a healthier blood lipid profile. Total cholesterol is important to pay attention to, but so is your HDL/LDL ratio.
