The last woman I dated said "I can't wait to meet you" and it turned out she wasn't over her ex and needed a fill in bf so in reality it was "I can't wait to meet you because it sucks being alone".

Just "thanks" When I was 22 (back in the dark ages), I was in bed with my boyfriend and I said "I love you" for the first time. His response: "thanks". We went on to a wonderful 12-year relationship... and we laughed about that response for years to come...so you never know!
