During the very early stages of dating, they will convey that everything's great, and that they're happy. Then out of nowhere you're dropped like a rock!!! Is it because they're too insecure to express their true feelings and/or doubts while they're still "deciding" on you?

She is, like everyone does, IMO, sizing you up. Men and women are on their best behavior in the beginning, after awhile people find that, perhaps, they do not share the same morals, values, and belief systems with the other person. She could have, like others, someone else on the side-line that she finds more suitable.

Talk to women who tried to honestly tell a guy she's not feeling it...and then the guy becomes a total drama queen. He'll either ask her 1000 questions of "why?" Or he'll work and try to convince her to give him a chance. Or he'll go misogynist and call her expletives, belittling her for not picking him. It's amazing how he'll claim to be a "nice guy" when it shows he's anything but nice. So women simply vanish because it's easiest. It's even why many women will try to build their connection options to a point where they can erase someone out of their life so he can't stalk her after the rejection. Suddenly her number won't work or she'll never answer....email will end up quiet...and he has no clue where she lives so he can't find her for an in-person confrontation. 2
