Well I text her that same night, no response. Waited 2 days and tried again, no response. Its been a few days now, should I give her a call? This is not a question of interest, cause she was clearly interested.

Only time to text the same night as being together is after sex or in a committed relationship and you are texting to either check that the other got home or that you made it home safely. -imo

Its not like I asked her to marry me. lol that would scare a girl off. Besides she was clearly interested and all I said was "Hey! It was nice to meet you".

She works at the kyosk next to me. When upon grabbing a bite to eat from her kyosk I got the vibe she was strongly interested. I think she got the wrong impression when I was talking to the girl at the kyosk next to her after. I was not hitting on her but I assume that's why she hasn't replied. Is it to late to change her mind?

It's impossible to know what's going on in her mind or if she was even truly interested in you, especially if you were a customer at her place of employment. They get paid to be nice to you. Anyway, try calling her. If she doesn't pick up, leave a voicemail and be done with it unless she calls you back. It doesn't seem promising, because she would have responded to your texts if she was interested. Nothing to lose, though. Go for it.

I don't think you should call now. Can you chat her up at work ?
