Aloof and distant in between dates..Would appreciate some !

First of all, I would just like to say I have read the threads here on loveshack for awhile, and this is the first time I have posted, and I really value alot of what I read here from people and their experiences. I'll cut to the chase....I have been dating this girl for over a month. I have known her for a couple of years, as she has cut my hair, and after dropping hints on me that she was interested, I finally asked her out. We have a lot of fun when we go out, (became intimate on our second date, I know probably a mistake!!) Here's the thing, we have fun, she has texted me after our last couple of outings and said what a great time she had, can't wait to see me again etc. etc. In between dates she is aloof and distant. Never initiates anything. I'll usually text to ask her out, and sometimes I'll call or text just to say hi. Now its not like I'm doing this everyday, I'm very aware of the risk of coming off as too needy or clingy. We see each other once every couple weeks. She is a single mom and works alot. I know she is busy, and I totally understand this, but the alloofness has gotten worse, since our last date she has kinda blowed me off (i.e. didn't respond to a couple of texts, finally returned a phone call). Our last date she proposed we take a day off from work and go hiking, spend the day together. Well now all of a sudden she can't take a day off. My question is, can anything really build if you are only seeing someone every couple weeks, and have minimal contact in between dates? Am I expecting too much? Should I just back off, and if she really has any interest let her contact me? I like this girl, but I want to be strung along. Like I said I've known her for a couple of years. This isn't some fly by night dating site encounter. Any advice or comments would be greatly appreciated.
