I never said there weren't bad restaurants for sushi in Japan (in fact, I said there were a few, and they weren't the cheapest, if you read everything I said). I simply said they had the best quality. Meaning: the best sushi quality fish in the world is found there, so you can get the best sushi there if you go to the right restaurant.

 

I'm an American. I've got nothing against Americans as long as they aren't overly ethno-centric, and that goes for every country.

 

So basically you're saying your blanket generalizations don't apply to...well, just about everything that you've blanketly generalized. At least we're making progress.

No, I'm saying the same thing I always said: The best sushi in the world is not in NYC. For SURE. Japan has better sushi than NYC. For SURE.

And I can say that NYC has better sushi than Japan for SURE and be making the same generalization. Again, that is your opinion and not a fact. Japanese sushi may be the best for you, but it is definitely not the best for everyone else. Not even close. That is the one thing for SURE.

Also: There aren't LOTS of restaurants in Japan that serve poor sushi because they couldn't stay in business since Japanese people are, naturally, pickier about sushi than other cultures. Just as you don't find loads of crap wine in Italy or France. No one would buy it.

 

Unless you've eaten at every sushi restaurant in Japan, you are in no position to make that (yet another) generalization.

Look, I get what you're getting at, but if a certain food originated in a certain place or geographic region, it's usually best to give deference to the original, not the imitation. Not that the imitation is automatically the worst food ever made, but it's still not the original.

I would never eat at a place in Japan that has bad sushi for the reason I mention above (Japanese people wouldn't eat there! Why would they when they can get cheap, high quality sushi all over the place?). I speak Japanese. I have relatives and friends in Tokyo. The places in Japan that serve less-than-stellar sushi (again, this is quality, not talking about what particular style you like)? Everyone knows about them, and they either don't last or locals aren't their customers.

 

Well, not everyone. But everyone who's like me and asks people stuff like that. :) I guess some people don't ask around about restaurants before they eat there.

Good points. One of my biggest pet peeves is when people make silly generalizations based on lack of information.

 

Agreed, except what I said about Jews and cream cheese, that's absolute fact...Put it in anything and we'll think its delicious. I once made gefilte fish dip for a party. Gefilte fish, for those of you dont know are those white balls or logs of chopped fish, usually carp, suspended in jars of grayish jelly or liquid. Not the most appetizing thing in the world, but everyone was raving about my dip. They wanted to know what made it taste so rich and decadent...My answer of course, was cream cheese.

I do. I don't dine in tourist traps here either. As I said, I'm a foodie.

 

But you can't get the same quality of fish here because it has to travel. . . I don't know why the geography/quality thing blows your mind. As I said, the sushi place we ate at recently had reasonably decent sushi. But it doesn't have the quality or freshness you find in Japan. . . because of where we live.

I would agree with this if this was 1950. In 2011 there is virtually no difference in food quality owing to storage/transportation issues.

 

There is a HUGE difference when you're dealing with fish that is best served raw and on the same day it's caught. There is also still a difference with various meats and produce, though it's been lessened, of course. But the fresher the food needs to be to be at its peak, the more of an issue it is. Nowadays more in flavor than in health, thankfully. But that's why American rolls are often more "creative"---it covers up the loss of quality and freshness of the fish.

 

What you're speaking of is why we can even have decent sushi that won't make you sick on the East Coast, but it's never going to be the quality you can get in Japan until we can teleport it. And even then, who knows what early teleporation tech will do to the molecules of food? :laugh:

 

(Granted not all sushi fish is transported that far, but the best quality fish for it is far away. So the best quality fish either has to travel far and fast or you get a lesser quality fish. Either way, if you live right next to where the best quality fish is caught. . . you're eating better sushi. That's just. . . common sense.)

Disagree, but that's why they're called opinions and not facts. You're entitled to think one place has better sushi than another, just as much as I'm entitled to think another way, as long as none of us try to naively pass off one location's food as the ultimate best food ever for SURE.

If you're from NYC and have such a limited concept of culture here then that means you must not get out of the house much. Try it sometime, you'd be surprised at how much this city has to offer. It's not as fresh or as close or as high a quality, by the very geography of where I am. That is all factual. So, there are plenty of facts AND opinions in my statement. If East Coast sushi sucks then why do you continue to eat it? So either you're a hypocrite or you're exaggerating your opinion to make it sound more informed than you really are. Taste is not a matter of fact, it is a matter of opinion. You would sound very foolish if you continued to assert that your opinion of what tastes good and what doesn't is a fact for everyone else. There are millions of people who find NYC sushi the best in the world, it doesn't make their OPINION any more correct than yours. Again I'm not sure if it's a cultural issue for you to have such arrogance and misguidedness.
