How long does a man or woman have to display consistently normal and nice behaviors before they can really be considered normal and nice?

I think it's less about duration and more about what kind of time/activities you do together. If you only meet for brief periods of time every time, it's short enough to keep up a relatively good appearance. If you go on a holiday together for ten days or engage in activities or tasks that are frustrating/challenging etc, or just spend time with them in a range of different social settings, you get more access to a person's real character.

IME after 8-10 months of exclusive dating, it's a pretty good chance you are seeing them as they really are

Aren't there at least little red flags along the way if they are asshats or psycho? Maybe little red flags that a lot of us tend to ignore?

I think the key is wait until infatuation stage is over, whenever that is for you. When under infatuation, red flags tend to get ignored. When out of overwhelming infatuation, you will see them if there are any.
