I have an interesting question to ask. Say a couple breaks up, yadda yadda, they decide to be friends. The guy asks the girl to go to the movies with him "as friends, of course" he adds with a laugh. The girl, while said yes, now feels a bit freaked out because their first ever date before they were official was at the movies, and she feels that a guy and a girl going to the movies seems very "date-ish" in a sense. Why couldn't the guy ask her out for a cup of coffee, or something casual-like?

It depends upon the nature of your break up. If you're the dumper, you have to consider that these types of activities can be painful for the other person, and she may be confused by your intentions possibly thinking that there's a possibility of rekindling something.
