So-called bad carbs are bad because they've had all the nutrients and fiber taken out of them through processing. Refined white sugar and white flour are the biggest culprits and mess with our sugar levels. Try to minimize or eliminate those, if you're worried about carbs. As long as the whole wheat bread you choose makes it clear that it is "100% whole wheat" or "100% Stone Ground Whole Wheat," that is a healthy wheat bread. Real wheat bread will have "whole wheat flour" as the first ingredient on its ingredient list. Try to avoid any "wheat" bread that does not use the word "whole" on the label or that includes the phrase "enriched flour" in its ingredient list. That bread uses mostly refined white flour, with only a handful of wheat flour thrown in.
Author ruggy Posted February 27, 2009 Author Posted February 27, 2009 Actually, I make my own bread and use whole wheat flour and whole wheat yeast. So I guess that is not the problem.
