Can I look stronger using weights.

I am a bit under weight at the moment and am going to put weight in in due course. I am eating healthy most of the time however... I wondered if I use weights and exercises every couple of days will my body look stronger and fitter even if I stay the same weight and dont up my intake . I aim to look slim but strong like Cameron Diaz.

You'll look and be stronger....

because you'll put on some bulk, muscle not fat. You'll also gain weight because muscle is heavier. Toning does not, however, really make you larger all over, just in those areas you exercise.
